Banana Raisin Wheat Muffins



Ingredients:
1 1/4 cups flour
1 tablespoon baking powder
1/4 teaspoon salt

1 cup shredded wheat cereal
1 cup fat-free milk

1 egg
1 cup mashed ripe banana (2 large bananas)
1/3 cup firmly packed brown sugar
2 tablespoons margarine, melted
1/2 cup raisins

Directions:
Heat oven to 400°F.

Mix flour, baking powder, and salt in a large bowl. Mix cereal and milk in another large bowl; let the mixture stand 5 minutes.

Stir egg, banana, sugar, and margarine into the cereal-milk mixture.

Add this mixture to the flour mixture; stir just until moistened. (Batter will be lumpy.)

Stir in raisins.

Spoon batter into a muffin pan that has been sprayed with non-stick cooking spray. Fill each cup two-thirds full.

Bake 20 minutes or until golden brown. Serve warm.

Makes 12 muffins


Nutrition information per serving: 150 calories, 2.5 grams total fat, 0.5 grams saturated fat, 20 milligrams cholesterol, 210 milligrams sodium, 30 grams carbohydrates, 2 grams dietary fiber, 13 grams sugars, 3 grams protein.
